I suspect you could hand them a binder on a stand or something, but it's going to be a gallery exhibit, so you have to deal with the somewhat limited attention span most people will have going through something like that. In other exhibits of theirs I've seen, they've had books under glass and reproductions of individual pages you could look at. (Though presumably a scholar could show up later and look at the whole book.)
